  1. Prepare the couscous.

    Follow the cooking instructions on its packet.

  2. Chop and rinse.

    Chop the cucumber and tomatoes.
    Rinse and drain the chickpeas.

  3. Dress and portion.

    Mix the yogurt with lemon juice and chopped herbs. Fold through the couscous, chickpeas and vegetables.

    Serve half now; chill the rest promptly for tomorrow.
